End-Grain Chopping Board
European Beech · 2022

The Wood
European Beech
This beech was sourced locally in the rolling hills of Mafra where it most likely had grown steadily for 80 to 130 years. At this level of maturity the growth rings in the heartwood of the tree achieve a harvestable density and size.
Beech is a cook's wood. Hard enough to resist knife marks, yet forgiving enough to protect your blade's edge. The end-grain construction, each block cut across the growth rings, creates a surface that self-heals around each cut.
The distinctive pattern emerges where the blocks meet: concentric rings of annual growth, each block a quiet study in the tree's history.
The Piece
Built to Outlast
End-grain boards take longer to make. Each block is cut, squared, arranged for colour and figure, then glued in sequence. The juice groove is routed by hand after the final flattening. One pass, no second chances.
The finish is food-safe mineral oil, applied generously then wiped clean of excess. Built up over several days, the grain is deepened without sealing the wood's natural ability to resist bacteria.
With care, this board will serve a kitchen for decades. Re-oil occasionally. Never submerge in water. Let it age.
